Our olives are manually picked, without damaging the fruit. It takes place when the fruit reaches its bigger size, and before ripening, that is, when the olive skin is green to straw yellow in colour (i.e. at green yellow stage), avoiding the final product to become inappropriate soft to be storaged.

Olives are picked in late summer-early autumn, i.e. between September and November.
